BEAUTIFUL BODY SALAD

To fill it up and also keep it lean and sexy, it takes a special kind of salad to make your tummy happy.
Like, exquisitely happy.
This, is that salad.
If you like the sensation of lots of tiny diced flavors of sweet and salty, dancing around in your mouth…
If you get pleasure out of hearing the crunch while knowing your body is getting a rush of “good for you” veggies that satisfy and cleanse, you’re gonna have a party in your mouth, and at the dinner table.

WHAT YOU NEED:

  • 2 cups cauliflower

  • 2 cups broccoli

  • 1 cup red cabbage, roughly chopped

  • 1 cup carrots, roughly chopped

  • 1-1/2 cups fresh parsley

  • 2 celery stalks

  • ½ cup almonds (chopped, slivered, or sliced)

  • 1/2 cup sunflower seeds

  • 1/3 cup dried cherries or craisins

FOR THE VINAIGRETTE:

  • 3 Tbsp olive oil

  • ½ cup lemon juice

  • 1 tablespoon fresh ginger, peeled and grated

  • 2 tablespoons clover honey

  • 1/2 teaspoon sea salt

WHAT YOU DO:

Cut and chop to your heart’s content.
I use my trusty Cutco knife for some of the veggies, and a Pampered Chef chopper for the nuts and seeds.
Do what works for you, using utensils and favorite items you already have.
Dump everything in a giant mixing bowl, and pour the vinaigrette generously over the entire contents.
Add sea salt and peppercorn to taste.
Consider doubling the recipe and put in glass containers to enjoy all week.
Your beautiful body will thank you.
