I can’t say as though I totally know Jesus diet but I have some ideas…
We know there was bread and wine, and that He called Himself both.
We know there were grapes and seed bearing plants.
We know he didn’t have a home to cook much, and we know he traveled on foot a lot.
So, I’m doing some guessing and taking a little artistic liberty here, but I imagine what a King would eat, and this had to have been on the menu. Jesus, though not a typical king, made do with what He had…
WHAT YOU NEED:
2 cups quinoa, cooked (about 1 cup uncooked)
HINT: I use Near East “Quinoa & Brown Rice Blend - Roasted Red Pepper & Basil. I cook it ahead of assembling this bowl recipe, following directions on the box1 red bell pepper, chopped
1/2 cucumber, chopped
1 cup chickpeas
HINT: you can use them straight from the can, once they’re rinsed, or saute’ them a bit in some olive oil, garlic salt, and various, favorite spices if you want… this process will make them a little crunchy or more flavored… your choice)1/4 small red onion, finely chopped
1/2 cup kalamata olives, cut in half
1/4 cup sundried tomatoes, finely chopped
1/3 cup fresh basil, finely chopped
1/4 cup crumbled feta cheese (*use vegan feta cheese if needed
FOR THE LEMON OREGANO DRESSING:
1 tsp lemon juice
1 tbsp white wine vinegar (or red wine vinegar)
1/3 cup olive oil
1 tbsp dijon mustard
1 tsp maple syrup
1/2 tsp dried oregano
1/2 tsp garlic powder
1/4 tsp ground cumin
salt & pepper to taste
WHAT YOU DO:
Let’s not complicate this, K?
If you have a pretty Insta worthy bowl, this is your chance to use it cuz you’re gonna wanna take pics at the end.
In your Jesus Bowl, of all the items you’ve prepared, choose the portions you want for an individual serving and pile them in.
Place them in pretty corners, and yeah… eat them that way, or mix them all together, your choice.
Toss in cooked quinoa, diced red and yellow pepper, cubed cucumbers, red onions, kalamata olives, sun-dried tomatoes (or small, sliced grape tomatoes if that’s your preference), fresh basil (or if you don’t have that, anything green works…
I use spinach cuz I always have that around), and add the feta cheese at the end.
Doesn’t fancy you to have dairy?
Cool, skip the feta.
Add goat cheese maybe, or not.
There’s little not to love about this meal, cuz you can mix and match it to your perfect liking.
IMPORTANT: Sit down when you eat this.
